Thai Chicken Peanut Noodles with Peanut Butter Sauce

This ones for the girlies who love peanut butter. I gotchu.

So, to be honest this started off as a Lazy Girl recipe but by the end I was a bit fatigued so ~this~ is your warning. This is for the days when you have a bit more energy!

The Three Components to a Well-Rounded Meal

Even if you’re making a quick and easy meal, you don’t need to put in a ton of time for prep and cooking. I always recommend including carbohydrates, protein, and fat at your big meals of the day. Bonus points if you add in some non-starchy veggies! This doesn’t mean you need separate ingredients for these components. You can have ingredients that crossover into both.

So for example with this recipe, our protein is the chicken, peanut butter, and peanuts. Our carb is noodles. Our fat is the peanut butter. And the non-starchy veg are the cabbage, carrots, and green onions.

Tips for Save Yourself Time

If you know you’re going to be busier one night, I highly HIGHLY recommend chopping your produce ahead of time. You can easily keep the chopped veggies in a tupperware container for later. Once you cut your produce, it’ll last for about 2-3 days so you can prep in advance. Chopping produce tends to take some energy out of me, hence, why doing all this at once may not constitute an official Lazy Girl meal.

Let's Make Some Noods!

Recipe: Thai Peanut Chicken Noodles with Peanut Butter Sauce

Prep/Cooking Time: 25 minutes

Yield: 4-6 servings

Ingredients:

  • 2 packages of Yaki-soba noodles (5-6 oz. packages)

  • A quarter-sized drop of olive oil

  • 2 chicken breasts (cut into 1-in.pPieces or however big you prefer your chicken)

  • 2 cups shredded cabbage

  • 2 carrots (peeled and shredded)

  • 2 green onions (thinly sliced, leave green section for garnish at the end)

  • 2+ Tbsp chopped peanuts

Sauce Ingredients (honestly I’d recommend potentially adding another ½ serving of sauce to make it 150% of the recipe):

Instructions for Thai Chicken Peanut Noodles with PB Sauce:

  1. In a medium-sized bowl, whisk together peanut butter, soy sauce, garlic, honey, ginger, rice vinegar, sesame oil, and Sriracha.

  2. In a large pot, boil water. Once boiling, add noodles until loosened (about 1-3 minutes) then drain. 

  3. Heat olive oil in a large skillet over medium heat. Add and sauté chicken for about 3-4 minutes until golden or thoroughly cooked.

  4. Add cabbage, carrots, and green onions to the skillet and stir until heated through (takes a minute or so).

  5. Stir in noodles and peanut butter sauce until thoroughly combined.

  6. Serve and garnish with cilantro and peanuts.
